Touch of Peanut Butter Brownies

So this week was my step-dad’s birthday, and since he’s into sweets, I decided the lazy girl way to satisfy a celebratory craving was brownies. It’s like cupcakes, but without the need to dig out the frosting tips. And what’s a chocolate brownie without something delicious on top to make it even more decadent?

3/4 C  – Unsweetened Cocoa Powder
1/2 tsp – Baking Soda
2/3 C – Apple Sauce (unsweetened, divided in halves)
1/2 C – Water (warm to hot)
2 C – Sugar (white/refined)
2 Eggs
1 1/4 C – Flour
2 tsp – Vanilla
1/2 tsp – Salt

Touch of Peanut Butter Frosting:

2-3 C – Powdered Sugar
2/3 C – Shortening
1/3 C – Peanut Butter (creamy)
3 tbsp – Margarine
1 tsp – Vanilla
1 tbsp – Milk (I used skim)

Optional: peanut butter to melt & drizzle over the top.

32 brownies (9×13 pan; cut 4 columns by 8 rows)

Fat: 7.1 g
Sodium: 83 mg
Carbohydrates: 26g
Protein: 2 g

How To Bake Them:

Whisk together the cocoa powder, baking soda, then add 1/3 C applesauce and the boiling water. and mix together thoroughly until blended and thickened.

Stir in sugar, eggs, and remaining apple sauce until blended.

Then add four, vanilla, and salt, and mix just until all of the flour is absorbed.


Pour it into a greased and floured (or wax paper lined) 9×13 baking sheet, and smooth it out to an even layer to touch the corners.


Then bake it for 35-40 minutes (depending on your oven) until you can insert a knife into the center and have it come out clean.

Let them sit while you mix together all of the frosting ingredients except the milk – this is easiest done in a bowl with a hand mixer, or in a stand mixer, add the milk if needed once ingredients are blended to get the desired consistency. Adjust amounts of peanut butter, powdered sugar, and vanilla to taste.


When the brownies are cooled you can spread the frosting over them and cut them – I like a 4 column by 8 row cut resulting in 32 pieces.


And voila! It’s not a super complicated recipe, nor the most basic, but it’s not Too bad for you and is a great way to indulge. By the way, if you opt without the frosting, the brownies are only ~78 calories each! You could just sprinkle them with a touch of powdered sugar if you’re wanting to go a lighter direction :).
